10 Paleo Desserts For Summer Gatherings That Everyone Will Rave About
If you are anything like me, your clean eating ways go out the window during the summer with all the barbecues, pool parties and gatherings that go down all summer long. I rounded up some delicious and healthy recipes for grilling a few weeks ago (which you can find here) and thought, how amazing would a list of healthy dessert ideas be? In hopes that it would help give me some inspiration when I'm racking my brain for what to make for a gathering, I compiled the list here. Beautiful, clean eating desserts that everyone will love without missing all the butter and sugar! Now just a disclaimer, when I say healthy I mean in moderation and compared to other desserts, please do not eat it as a main course and think you are on track for healthy eating for the day (although I may or may not have eaten half the pan of lemon bars the last time I made them). No-Bake Paleo Lemon Bars - I don't know about you all, but lemon is one of my all time favorite flavors for summer, so light and refreshing! These bars are not only Paleo, Vegan and Gluten Free, but they also require no baking which means no heating up the house with the oven on a hot summer day! Just be prepared to make these early in the day or the night before your gathering as they will need to chill in the refrigerator for a period of time prior to serving. No-Bake Strawberry Shortcake Bars - I am such a fan of the classic strawberry shortcake dessert that when I saw this recipe I immediately put it in my must try list. Not only delicious but such a beautiul presentation, they will be the star of any dessert table. I am planning these for our 4th of July celebration and can not wait to bite on in to these bad boys! Healthy No-Bake Unicorn Cookies - Have you caught onto the unicorn craze yet? Well I will tell you these are likely about 20 times healthier than the Starbucks Unicorn Frappaccino from what I hear, likely more delicious too! I think these would be great as an appealing healthy kids dessert! And little would they know that they are Paleo, Vegan, and Gluten Free as well! And who are we kidding, appealing and tasty for adults too, you can bet I will be indulging in these as well. Easy Vegan Raspberry Cheesecake - Raspberries are a delicious summer fruit high in antioxidants, with a wonderfully sweet and tart combination. This cheesecake is not only gorgeous in presentation but is also Vegan and Paleo. This one will have everyone kicking their feet up and enjoying every flavorful bite. Cookie Dough Paleo Cheesecake With A Brownie Crust - Please excuse me while I pick my jaw up off the floor. Paleo cookie dough!? I must have died and gone to Paleo heaven. Now this dessert certainly takes some preparation but is absolutely worth the extra effort for the taste and the wow factor it delivers. This is certainly a dessert that should be enjoyed in moderation, even with the Paleo credentials, but certainly a healthier version compared to what you would find elsewhere! Paleo No-Bake Key Lime Pies - My husband and I went on a key lime kick after visiting the Florida keys a while back and I think it's about time to bring that phase on back. As much as I love lemon, its great to change up flavors every once in a while and key lime delivers the same light and refreshing flavors with a little bit more of a punch. Raw Mixed Berry and Vanilla Bean Cheesecake - Did you ever think eating a Paleo diet could look this pretty? Forget the pounds of sugar, cream cheese, and butter in all the other cheesecakes and go straight for this spectacular, healthier version. This is one that you will want to prepare ahead for as some ingredients need to be prepped overnight and the cheesecake itself needs to freeze for some time prior to serving, but your hard work will definitely be rewarded! Paleo Lemon Sorbet - How about an easy and light dessert to serve after a heavy meal or a day of indulgence? This lemon sorbet is made with very few ingredients and under 30 minutes prep time.
